Al Luqaimat (Zainab Fingers)

This is a very tasty arabic sweet which is very commonly found in any arabic bakery. It is said that Zainab fingers dates back to more than100 years when a woman called Zainab made this beautiful dish. It is literally believed as the food of the Judges, and is sometimes called Loukoumades.

Ingredients

1 teaspoon yeast
Pinch of sugar
2 cups plain flour
2 tablespoons corn flour
3 tablespoons Full Cream Milk Powder
Pinch of salt
1½ cups water
2 cups oil for deep frying
2 cups sugar syrup

Directions

In a small bowl, combine yeast with pinch of sugar and ½ cup of water.
In another bowl, combine flour, corn flour, milk powder and a pinch of salt. Add the yeast mixture and rub the ingredients using fingertips until they resemble breadcrumbs.
Add water in batches and mix well until a soft dough forms. Cover and set aside for 1½ hours or until doubled in size.
Divide the dough into small walnut size balls. Deep fry the dough in 180°C preheated oil for 6-8 minutes or until golden brown.
Dip the ready fried balls in the ready syrup for 2 minutes. Remove and serve.
