Avocado Beef Burger

This is the era of burgers and fast food. Too much of such junk would create many health hazards in the future. But a treat once in a while is quite acceptable, especially when we are making it at home. Enjoy this avocado beef burger recipe.

Ingredients

1 lb ground beef
1 large avocado
1 tablespoon green chili pepper, diced
1 egg, slightly beaten
1⁄4 cup green onion, chopped
1 teaspoon fresh lemon juice
1 teaspoon minced garlic
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper
Hamburger bun
4 -6 teaspoons butter, melted
tomatoes
onion (optional)
mayonnaise

Directions

Take the avocado and slice in half, remove the pit and peel each half.
Sprinkle fresh lemon juice over each half of avocados. Slice one half of avocado and set aside.
In a medium bowl, take other half of the avocado and mash with a fork.
Add chili peppers, egg, onions, minced garlic and salt and pepper. Stir to combine.
Add ground beef to the mixture and combine well.
Shape into 4 beef patties.
Chill in ref. for 10 minutes.
Heat  a skillet. Pan fry hamburger patties until no longer pink inside.
Butter each hamburger bun and toast on the top shelf of a grill or in the oven on broil.
Mayonnaise each hamburger bun and top with hamburger, tomato, slice of avocado and onion (opt).
Serve with french fries , or potato chips or one of your favorite snacks.

Vietnamese Beef Fry With Garlic and Lime

This is a different beef fry recipe made with a variety of sauces. It is a perfect accompaniment with chappathis and rotis as a side dish. It is truly a yummy non-vegetarian dish and a real treat for all those who are looking for a different beef recipe.

Ingredients

2 Tbs. soy sauce
2 Tbs. fresh lime juice
1 1/2 Tbs sugar
1 Tbs. tomato sauce
3 Tbs. olive oil
Salt and freshly ground black pepper
500 gm beef cut into 3/4-inch pieces
1 medium onion, sliced
5 cloves garlic, minced
1 tbs Coriander leaves

Method

In a small bowl, combine the soy sauce, lime juice, sugar, and tomato sauce, stir until the sugar dissolves. In another small bowl, stir the garlic, 1-1/2 tsp of the oil, and 1-1/2 tsp. pepper.Keep aside.

Season the beef with salt and pepper. In a nonstick skillet, heat 1-1/2 tsp of the oil over medium-high heat until shimmering hot. Swirl to coat the skillet. Add half of the beef in a single layer and cook, without stirring, until well browned, 1 to 2 minutes. Using tongs, turn the pieces over and brown on the other side, 1 to 2 minutes more. Transfer to a medium bowl. Add 1-1/2 tsp. oil to the skillet and repeat with the remaining beef, adding it to the bowl with the first batch when done.

Put the remaining 1-1/2 Tbs. oil in the skillet and heat until shimmering hot. Add the onion and cook, stirring frequently, until it begins to soften, 2 to 3 minutes. Add the garlic mixture and cook, stirring constantly, until fragrant, about 30 seconds. Return the beef and any accumulated juices to the pan and stir to combine. Add the soy sauce mixture and cook, stirring constantly, until the beef and onions are coated, sauce thickens and becomes slightly dry, 7-8 minutes. Sprinkle with coriander leaves and serve hot.

Beef Ularthiyathu

Beef ularthiyathu is a very tasty beef recipe. It is perfectly cooked in a thick gravy and all its flavours are perfectly sucked in by the beef pieces. It tastes simply great with matta rice and kachiya moru. It is the most commonly made of all the beef recipes and is personally my favourite. My mom makes it with great expertise and this is one of her no fail recipes. 
Ingredients
Onion - 1 no(finely chopped)
Beef- 1 kg cut into small pieces
Garlic - 4 cloves(chopped)
Ginger - 2 tsp(chopped)
Greenchillies - 4 nos(slit)
Curryleaves - Few
Coconut - 1/2 cup(finely chopped)
Pepperpowder - 1 tsp

For grinding
Onion - 1 no(cubed)
Ginger - 1 no(small size)
Garlic - 4 cloves(peeled)
Greenchillies - 2 nos
Corianderpowder - 1 tbsp
Chillypowder - 2 tsp
Turmericpowder - 1 tsp
Meat masala powder - 2 tsp
Garam masala powder - 1 tsp
Cuminseeds (Jeerakam) - 1 tsp
Curryleaves - 1 sprig
Salt - As reqd
Oil - As reqd

Directions
Heat 2 tsp oil in kadai, add cumin seeds, onion, green chillies, ginger, garlic and curry leaves.
Saute till the onion becomes brown in color.
Add chilly powder, turmeric powder, coriander powder, meat masala, garam masala and a pinch of salt.
Reduce the flame and fry the masala till it becomes dark brown in color and a nice aroma comes.
Remove from flame and allow it to cool.  Grind the mixture finely and keep this aside.
Take a pressure pan, add 1 tbsp oil and fry the ground masala till it becomes dark in color. At this stage add beef pieces and little salt and saute for 5 minutes.
Add little water and cook it in pressure cooker.(Make it into a semi thick masala)
 Heat oil in another pan, add ginger, garlic, green chillies and onion. Fry for 3 minutes.
Add the cooked beef masala and fry till the water evaporates.
Add curry leaves, coconut pieces to it and make the masala dry. Now add little pepper and remove from flame.
 A very delicious beef ularthiyathu is ready. Serve hot with kerala rice.

Traditional Beef Fry

Who doesnt like some hot beef fry with warm chappathis or warm rice! Beef fry can be made in different ways but there is nothing like the traditional kerala spicy beef fry. I would say that it is the tastiest of all beef recipes. The clear medley of all the spices creates sweet symphonies in our pallette which is worth all the efforts needed to bring it together.
Ingredients
Beef-1/2 Kilogram
Small onion-1 Cup
Ginger (Crushed)-1 1/2 Tablespoons
Garlic (Crushed)-11/2Tablespoons
Dried Red Chilly-7
Coriander Powder-2 Teaspoons
Turmeric Powder -1/4 Teaspoons
Pepper Powder-1 Teaspoon
Garam Masala-1 1/2Teaspoons
Aniseeds Powder-11/2Teaspoons
Vinegar2 Teaspoons
Salt
Thengakothu (Small square size coconut pieces)¾ Cup
Coconut oil
Curry leaves
Steps
Crush dried red chilli. Marinate cleaned beef pieces with ingredients listed from Small onion (No.2) to Salt (No.12). Keep it aside for 30 minutes.
Add 2 tbsp of water to this and pressure cook till the beef is done. Usually it would be done in 2 whistles.
If there is excess water , cook till the water has almost dried up.
Heat oil in a pan and fry coconut pieces until it becomes golden brown color. Keep it aside.
Heat oil in a pan , add lots of curry leaves and fry it.
Add cooked beef and fried coconut pieces to it.
Stir it well. Cook on low flame for around 15 - 20 minutes. If required, add oil in between. Stir it until it becomes black in color.

Meat Puffs

I had tried Chicken puffs early this week and it was a huge hit. So i tried making the same with meat stuffing inside and it turned out even better. The folds and the crust came out quite perfectly this time and im super thrilled. So now, the next on the list is an egg puffs. But try out this recipe now. Enjoy.
Ingredients
Puff Pastry – 4 square sheet
300 grams Minced meat
1/2 small onion chopped fine
1 small garlic minced
1/4 inch piece ginger minced
1/2 tsp Cinnamon
1/2 tsp Cumin
1/4 tsp Paprika
2 tbsp Chopped Cilantro or parsley
1 tbsp Lemon juice
Salt and pepper to taste
1/2 beaten egg
Oil
Method:
Ensure the puff pastry is thawed but kept cool in the fridge
Make the filling –  Start by sauteing the onions, ginger, garlic in one tbsp oil.
Then add in the meat mince and spices.. Break the meat well and cook on medium heat. You do not want large chunks of meat in the pastry.
Once the meat is cooked and almost all the liquid is absorbed (don’t make it too dry) – add in the salt, pepper, lemon juice and chopped cilantro.
Give it a taste test.
Cool the mixture completely before you proceed to filling it.
Now  place the filling in the center of each  puff pastry square. Fold from all four sides
Not too much filling just enough so you can fold over and not too little because once the pastry is baked it will puff up and the filling will be lost inside.You should have a good balance of meat and pastry.
Brush egg wash on the folds.
Preheat the oven to 200 C/400 F – for 10 minutes.
Place the puff pastry in the oven on the middle rack and bake for about 12 to 15 minutes until golden and puffed up.

Kerala Beef Curry

Ingredients
Beef Cubes-1/2 Kilogram
Onion Sliced3
Ginger Chopped1 Teaspoon
Curry Leaves Sprig 5
Water1 Cup
Green Chilli vertically slit4
SaltTo Taste
Coconut Oil
To Grind
Garlic Chopped1 Tablespoon
Ginger Chopped1 Tablespoon
Coconut chopped- 1/4 cup
Kashmiri Chilli Powder1 Tablespoon
Turmeric Powder1/4 Teaspoon
Coriander Powder1 Tablespoon
Fennel Seeds1/2 Teaspoon
Cinnamon1
Clove4
Cardamom3
Black Peppercorns1.5 Teaspoons
Method
Grind all items under "To Grind" to a paste.
Heat oil in a pan.Add sliced onion,ginger,green chilies, coconut pieced and curry leaves. Saute until onion turns translucent.
Add the ground masala and fry until oil starts to separate.
Add beef and mix well.Add water and salt to taste,cover and cook until beef is done to your liking.
Uncover and cook for few more minutes until gravy turns thick.
