Avocado Beef Burger

This is the era of burgers and fast food. Too much of such junk would create many health hazards in the future. But a treat once in a while is quite acceptable, especially when we are making it at home. Enjoy this avocado beef burger recipe.

Ingredients

1 lb ground beef
1 large avocado
1 tablespoon green chili pepper, diced
1 egg, slightly beaten
1⁄4 cup green onion, chopped
1 teaspoon fresh lemon juice
1 teaspoon minced garlic
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper
Hamburger bun
4 -6 teaspoons butter, melted
tomatoes
onion (optional)
mayonnaise

Directions

Take the avocado and slice in half, remove the pit and peel each half.
Sprinkle fresh lemon juice over each half of avocados. Slice one half of avocado and set aside.
In a medium bowl, take other half of the avocado and mash with a fork.
Add chili peppers, egg, onions, minced garlic and salt and pepper. Stir to combine.
Add ground beef to the mixture and combine well.
Shape into 4 beef patties.
Chill in ref. for 10 minutes.
Heat  a skillet. Pan fry hamburger patties until no longer pink inside.
Butter each hamburger bun and toast on the top shelf of a grill or in the oven on broil.
Mayonnaise each hamburger bun and top with hamburger, tomato, slice of avocado and onion (opt).
Serve with french fries , or potato chips or one of your favorite snacks.

Chocolate Avocado Muffins

This is a surprisingly tasty chocolate muffin recipe.There is an avocado in it, but it doesn’t taste like avocado at all,  it is only there for the texture. Avocado is used as a substitute for butter. This is dense, thick and a sweet muffin and hence can be considered as a regal breakfast dish.

Ingredients

1 ripe large avocado
1/2 cup sugar
2 eggs
1 tsp vanilla
1 cup whole wheat flour
½ cup cocoa powder
½ tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup milk
¼ cup mini chocolate chips

Instructions

Preheat the oven to 350. Prepare muffin tin by putting liners in and spraying them with cooking spray.
In a large bowl, beat the avocado and sugar until as smooth as it will get. Its okay if there a few small chunks of avocado. They will mush in as you add the dry ingredients.
Add the vanilla and the eggs, mixing until well incorporated.
Mix the dry ingredients.
Alternate adding dry ingredients with the milk until they are well mixed. Do not over mix, but also make sure to smush up any remaining little specks of avocado. Mix in the mini chips.
The batter is pretty thick and dense. Fill the muffin cups about ⅔ full. I used an ice cream scoop to do it easily and cleanly.
Give the pan a good couple of taps on the counter to level them out a bit. Bake for 18-20 minutes or until set, a bit puffed and a toothpick comes out with some moist crumbs.
Let cool completely. These will store well covered on the counter, or freeze to keep them fresh longer.

Chocolate Strawberry Avocado smoothie

This is indeed a smoothie dessert treat which does not exactly come under the category of a "Healthy Smoothie" and definitely not a smoothie fit for a diet plan. This is a creamy chocolate treat to cool off on a hot afternoon  or just enjoy it after dinner as a special end to the day. The taste is all from the strawberries and chocolate, with a little extra honey for sweetness if you like it that way. Adding avocado to the smoothie provides some healthy fats to balance out the sugar in the chocolate and honey.

Ingredients

1 cup frozen strawberries
1 ripe avocado, roughly chopped
1 tbsp. cocoa powder
1 ½ cup almondmilk
½ tsp. vanilla
1 tbsp. raw honey

Preparation

Place all the ingredients in a blender, and pulse until everything is smooth.
Pour mix into small glasses, and garnish with chocolate logs.

Chocolate Avocado Cookies

This is a much healthier version of a cookie. The name may not sound very appealing but in reality, it is just awesome and very much like any chocolate cookie. The avocado serves the purpose of butter without adding much flavour to the cookies. Try this.

Ingredients

3/4 cup avocado flesh (very ripe, but not brown)
½ cup  sugar
1 egg
½ cup dark cocoa powder
50 gm dark chocolate chunks
½ tsp. baking soda

Instructions

Preheat oven to 175°C / 350° F.
In a bowl using a hand mixer (or make everything in a food processor), mix together avocado and sugar until smooth. Add in the egg.
Mix in the cocoa powder and baking soda.
Stir in chocolate chunks.
Using two spoons place dollops of cookie dough in a baking sheet with parchment paper. The cookie won't spread as much as usual cookies when baking, so make sure to flatten them out a bit with the back of the spoon.
Bake for 8-10 minutes or until the cookies don't stick as much to the paper as they did before baking.
Cool down. Store in an airtight container in the fridge.

Apple and Avocado Chicken Salad

This is quick, basic chicken salad that uses mashed avocado as a binder instead of the more traditional mayonnaise.The unexpected ingredient in this chicken salad is chopped apple. Apple brings sweetness, tartness, and crunch to the chicken salad, helping to round out the flavors.
Avocado replaces the fat of a mayonnaise, but not the seasoning. So I am adding salt, pepper, and a good dose of lime juice.

Ingredients

1 cup finely chopped cooked chicken
1 ripe avocado, seeded and peeled
1 apple, peeled, cored, and finely chopped
1/4 cup finely chopped  onion
2 Tbsp finely chopped cilantro
2 teaspoons lime juice
1/2 teaspoon salt
Pinch of freshly ground black pepper

Method

Place the chicken, avocado, apple, and onion in a medium bowl. Gently mash the avocado with a fork and stir it around so that everything gets well mixed.
Add the cilantro, lime juice or lemon juice, salt, and pepper. Add more lime juice or salt to taste. If the mixture seems a little dry, you can stir in a teaspoon or two of olive oil.

Avocado and Potato Chicken Wraps

This is a super-fast wrap sandwiches which I make when ever I feel really hungry but lazy to make a full meal. my little boy absolutely adores it. The creamy avocado, chicken and boiled potatoes are quite satisfying and fresh tasting. It doesn't get more simple and delicious than this!

Ingredients

Chicken pieces, sliced
Lime juice ½ lime
½ tsp mild chilli powder
1 garlic clove, chopped
1 tsp olive oil
2 tortilla wraps or any wrap of your choice.
1 avocado, halved and sliced
A handful of sliced purple cabbage
Half boiled potato
few sprigs coriander, chopped

Method

Mix the  chicken pieces with the lime juice, chilli powder and garlic.
Heat the oil in a non-stick frying pan then fry the pieces for a couple of mins, while you warm the wraps following the pack instructions or if you have a gas hob, heat them over the flame to slightly char them. Do not let them dry out or they are difficult to roll.
Squash a few sliced avocado onto each wrap, add the purple cabbage and boiled potato to the pan to warm them through then pile onto the wraps with the chicken pieces, and sprinkle coriander. Roll up, cut in half and eat with your fingers. Garnish with Tomato sauce and mustard sauce.

Spicy Avocado Chicken

This is a variety chicken dish with lots of flavour and very little effort. It may not look visually very appealing but trust me, it is a very very yummy dish. Next time you invite someone for dinner, impress your guests with this unique avocado chicken dish that is sure to surprise everyone and bring you a lot of praises.

Ingredients

1 teaspoon salt
1/4 teaspoon ground black pepper 1/4 teaspoon ground cayenne pepper
4 skinless chicken drumsticks
2 tablespoons olive oil
1 red onion, minced
2 tablespoons lime juice
1 avocado, diced
Green Chilly-2
Salt and ground black pepper to taste

Directions

Stir 1 teaspoon salt, 1/4 teaspoon black pepper, and cayenne pepper together in a small bowl; rub evenly into the chicken.
Heat the olive oil in a skillet over medium heat. Perfectly cook the chicken in the heated oil until no longer pink in the center and the juices run clear, 5 to 7 minutes.
Blend the onion, lime juice, green chilly and avocado together in a blender.  Season with salt and pepper. Spoon over the chicken pieces to serve.

Avocado Smoothie

Though I am not a big fan of raw avocado, I absolutely love it when it is made into a smoothie. It is tryly yummy when pulsed with vanilla icecream and cold almond milk. A very filling, must try smoothie recipe.

Ingredients

1 ripe avocado, pit and skin removed
¾ cup unsweetened almond milk
1 cup Vanilla Icecream
2 teaspoons honey
1 cup ice

Instructions

Combine  avocado, almond milk, Vanilla ice cream and honey in a blender. Add ice, cover and puree until no chunks of ice remain, 30 to 45 seconds.

Avocado Ice cream

This is a not-so-common Ice cream recipe using a variety ingredient, avocado. Avocado is a very healthy and nutritious fruit and including it in your diet makes you quite healthy and can boost your immune system. But if you are like me, you wont like its raw bland taste.This is a perfect dessert recipe to consume avocado and I am sure that everyone would ask for a second helping.

Ingredients

1 avocado, peeled and pitted
1/2 cup milk 
1/2 teaspoon vanilla extract
1/2 cup condensed milk
1 tbsp Cornflour
White Sugar if needed

Directions

Mash avocado with an electric mixer, or use a food processor. Blend in the milk, cornflour, condensed milk, sugar and vanilla until smooth. Chill for about 20 minutes before serving.

Chocolate Avocado Pudding

This is a very easy pudding recipe made with avocado and chocolate. You might be surprised at the combination but it truly makes a great pair when it comes together in this dessert recipe. Make sure that the avocado you are using is very ripe. Enjoy!!

Ingredients

1 medium avocado, ripe
2 Tablespoons unsweetened cocoa powder
2 Tablespoons honey
6 Tablespoons almond milk
optional: pistachios or other nut for topping

Method

Cut open the avocado and scoop out the pit. Cut it into large chunks and put in the blender.
Add the cocoa, honey or agave, and almond milk. Blend, starting on low and then moving to high speed until it is smooth.
If the avocado is larger, you will need a bit more of each ingredient. If it is too thick, drizzle in a bit more almond milk. Add more cocoa or honey or agave to taste.
Refrigerate the pudding and serve cold. Top with pistachios or other nuts. Enjoy!

Avocado and Banana Smoothie

This is another tasty smoothie recipe. It is very heavy and quite filling. This is highly nutritious too and can be whipped together easily. It can be an integral part of a healthy diet plan.

Ingredients

1 ripe juicy banana cut into chunks
½ ripe avocado, pit and skin removed
¾ cup unsweetened almond milk
2 teaspoons honey
1 cup ice

Instructions

Combine banana, avocado, almond milk and honey in a blender. Add ice, cover and puree until no chunks of ice remain, 30 to 45 seconds.
