Purple Cabbage, Corn and Yogurt Salad

The amazing thing about this salad is the colour of it. The taste is also amazing and overall it is one of the easiest and healthiest salad recipes available. It can be put together in no time and can be a part of a healthy diet plan.

Ingredients

1/4 of a large purple cabbage finely sliced in the food processor or by hand.
1 small onion, finely sliced
2 tbsp Sweet corn boiled

1 chopped salad cucumber(Optional)
A tablespoon of chopped, fresh coriander
The juice of half a lemon
A cup of fat-free Greek yogurt

Method

Dice up the cabbage, Cucumber, Sweet corn and onion, place in a bowl and squeeze the lemon over it. Add yogurt to taste, more yogurty for Raita, less for slaw, mix in most of the coriander, mix together and then sprinkle the rest of the coriander on top.

Caramelized Cabbage

This is a very different version of a cabbage dish. It is usually served with chicken or meat. The slightly sweet taste adds colour to the taste of cabbage. I used purple cabbage because it decorates a dining table perfectly well.

Ingredients

1 large purple cabbage, cored and sliced thin
3 Tbls. olive oil
1 Tbls. butter
1 tsp. kosher salt
1 tsp sugar
1/4 - 1/2 tsp.  pepper
1 tsp soya sauce

Directions

In a large skillet, heat oil and butter on med/high.
Add the cabbage and saute until golden while constantly stirring. This may take about 25-35 minutes. Keep scraping the bottom of the pan. And don't worry if the pan is getting brown, just keep scraping and tossing the mixture around. Add the salt, soya sauce and sugar after about 15 minutes of sauteeing. Keep browning until the mixture is very nicely caramelized and tastes sweet.
Serve warm.

Oven Roasted Cabbage

This is an easy hot salad recipe.It can be eaten as such as a snack or can be served as a side dish to adorn your dining table. It is too easy to be made and is primarily a kids salad recipe. So teach your kids to make this yummy dish and enjoy!

Ingredients

1 head purple cabbage
3 tablespoons olive oil
1 teaspoon salt
1/2 tsp lemon juice
1 teaspoon sugar
1⁄4 teaspoon pepper
2 teaspoons balsamic vinegar
2 teaspoons soya sauce

Directions

Pre-heat oven to 425°F.
Combine salt, lemon juice pepper, and sugar in small bowl. Set aside.
Brush a rimmed baking sheet with 1 tablespoon olive oil.
Arrange cabbage in single layer on baking sheet and brush with remaining 2 tablespoons olive oil. Sprinkle with salt mixture.
Roast until cabbage is tender, 25 to 35 minutes.
Sprinkle hot cabbage with balsamic vinegar and soya sauce. Serve.

Apple and Avocado Chicken Salad

This is quick, basic chicken salad that uses mashed avocado as a binder instead of the more traditional mayonnaise.The unexpected ingredient in this chicken salad is chopped apple. Apple brings sweetness, tartness, and crunch to the chicken salad, helping to round out the flavors.
Avocado replaces the fat of a mayonnaise, but not the seasoning. So I am adding salt, pepper, and a good dose of lime juice.

Ingredients

1 cup finely chopped cooked chicken
1 ripe avocado, seeded and peeled
1 apple, peeled, cored, and finely chopped
1/4 cup finely chopped  onion
2 Tbsp finely chopped cilantro
2 teaspoons lime juice
1/2 teaspoon salt
Pinch of freshly ground black pepper

Method

Place the chicken, avocado, apple, and onion in a medium bowl. Gently mash the avocado with a fork and stir it around so that everything gets well mixed.
Add the cilantro, lime juice or lemon juice, salt, and pepper. Add more lime juice or salt to taste. If the mixture seems a little dry, you can stir in a teaspoon or two of olive oil.

Cabbage and Corn Vinaigrette

This is a very tasty dry salad recipe. We make it very often for dinner as an extra side dish with chappathi and curry and also as a simple tossed salad with friedrice.
A very easy and extremely tasty salad recipe.

Ingredients

For the dressing

2 limes, juiced
1/4 cup red wine vinegar
1 teaspoon salt
20 grinds fresh black pepper
1/3 cup extra-virgin olive oil

For the salad

1/2 small head red cabbage, trimmed, cored, and shredded
1 (15-ounce) can corn kernels
1 bunch fresh cilantro, washed, dried, and finely chopped

Directions

Make the dressing by whisking all the ingredients together in a small bowl. Toss all the salad ingredients together in a large mixing bowl.
Just before serving, toss the salad with the dressing. Keep refrigerated and covered until ready to use.

Fruit and Vegetable Raita

This is an absolute treat for all diet conscious people out there. This is a very filling snack and almost equalent to a hearty meal. You can include almost all fruits in it and most of the salad veggies too and hence it is a highly nutritious raita.

Ingredients

4 slices Pineapple (cubed)
1 medium Apple (cubed)
1 medium Pear (cubed)
1 large Tomato (cubed and deseeded)
1 medium Cucumber (cubed and deseeded)
1 medium Onion (chopped)
15 Fresh Mint Leaves (chopped)
1/4 tsp Black Pepper
Cumin Seeds (roasted and powdered)
Salt to taste
1 cup Yogurt
1/2 cup Fresh Cream
Olives-2 tbs
Sweet corn- Half cup

Method

In a bowl, mix well the roasted cumin powder and yogurt.
Add the coarsely ground pepper, salt and fresh cream to it and mix.
Now add the sweet corn, Olives, chopped fruits and vegetables and mint leaves and mix well.
Serve.

Vinaigrette Veggie Salad

A vinaigrette veggie salad always adorns a dining table or a feast especially when we play the role of a host. It can be treated as a simple but tasty vegetarian starter and is one of the most commonly made salads. The easiest no-fuss salad recipe when you are in a strict diet plan!

Ingredients

1 medium cucumber, sliced
1 medium green pepper, sliced
1 carrot sliced
1 onion sliced
1 tomato sliced
1/4 teaspoon salt
2 tablespoons canola oil
1 tablespoon white vinegar

Directions

In a serving bowl, combine the cucumber, onion, carrot, capsicum and tomatoes. Sprinkle with salt. In a small bowl, whisk oil and vinegar. Pour over salad, toss to coat. Garnish with lemon slices and salad leaves.

Fruit Raita

This can be called as the King of all Raitas. This is a medley of a variety of fruits immersed in a cream and yogurt sauce. A very healthy, rich and easy to prepare raita recipe that can adorn any meal with its presence. A must try recipe for all my diet conscious friends! I've used cucumber here because it helps to balance the sweetness of the raita.

Ingredients

Pear -1
Apple- 1
Peaches -2
Plums- 2
Pineapple -4 slices
Banana -1

Mango -1 

Almonds- 4
Fresh mint leaves -10
Cumin seeds- 1 teaspoon
Lemon-1/2 tsp
Yogurt -2 cups
Salt to taste
Black peppercorns,crushed freshly -1/4 teaspoon
Fresh cream -1/2 cup

Cucumber- 1

Method

Wash and chop pear, apple, cucumber,plums, peaches and pineapple . Peel and chop banana and mango. Clean, wash and chop mint leaves. Dry roast the cumin seeds and powder.
Add the roasted cumin powder to the yogurt in a bowl. Add salt, freshly crushed peppercorns, fresh cream and whisk.Add all the chopped fruits and mint leaves and mix well.

Apple Raita

Another great Raita recipe. It is the best accompaniment for rice and biryani and also a perfect snack to satiate the sudden pangs of hunger. One of the healthiest Raita recipes.

Ingredients

1 1⁄4 cups plain yogurt
1⁄4 teaspoon salt
fresh ground black pepper, to taste
1⁄4 teaspoon pepper
1⁄2apple, peeled and chopped into a small dice

Directions

Put yogurt in a bowl.
Beat lightly with a fork until smooth and creamy.
Add all remaining ingredients and mix well.

Sweet Corn and Olive Salad

This is a very healthy salad recipe and a perfect one to follow a diet plan. A salad is always a big welcome in my home especially because of the ease with which it can be made in no time. Thus is a tasty salad recipe and a must try for all health conscious beauties out there.

Ingredients

3 cups boiled sweet corn kernels
1/2 cup chopped onions
1/2 cup tomato slices
1/2 cup cucumber slices
2 Tablespoon Olives
Few Parsley leaves

To Be Mixed Into A Vinaigrette Dressing
1 tbsp vinegar
2 tbsp olive oil
1 tbsp sugar
1 tsp Lemon juice
salt and freshly ground black pepper to taste

Method

Combine the sweet corn,  onions, cucumber, olives, parsley and tomatoes in a deep bowl and mix well.
Pour the vinaigrette dressing over the salad, toss well and refrigerate for at least an hour.
Serve chilled.

Cucumber Raita

This is one of the most commonly prepared Raita recipe. This cucumber-yogurt sauce is used in Indian cuisine as a cooling balance for spicy dishes. It is a perfect side dish for biryani and a great condiment for grilled meat or poultry.

Ingredients

1 small cucumber, peeled, seeded and diced
1 cup low-fat plain yogurt
2 tablespoons chopped fresh mint
1 tablespoon lime juice
1 small clove garlic, minced
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper

Preparation

Combine cucumber, yogurt, mint, lime juice, garlic, cumin, salt and pepper in a small bowl. Serve immediately or cover and refrigerate for 30 minutes to allow flavors to blend.

Coleslaw Salad

All of us must have eaten the coleslaw served with KFC or other fast food outlets. But how many of you know that we could make exactly the same thing at home without any harmful preservatives? Here is an easy coleslaw recipe that is as yummy as a KFC Coleslaw.

Ingredients

1/3 cup white sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice
8 cups finely chopped cabbage 1/4 cup grated carrots

Directions

In a large bowl, whisk together the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar and lemon juice until smooth. Add cabbage and carrots and mix until blended with the dressing. Refrigerate at least 2 hours before serving.

Bean Sprout Salad

This one is a gluton free, fat free high fiber salad recipe.This simple, fresh salad is loaded with bean sprouts, tomatoes and zesty lime juice. You can ssemble just before serving. The best way to fill your stomach without regrets.
Ingredients
2 cups bean sprouts
1/2 cup diced red onion
3/4 cup diced tomatoes
2 teaspoons lime juice
2 tbsp peanuts
1/4 teaspoon  salt
Freshly ground black pepper
Method
Mix bean sprouts with onion, peanuts, and tomatoes in a serving bowl. Stir in lime juice, salt and pepper. Taste and adjust seasoning.

Easy Lemon and Mint Fruit salad

The easiest and very healthy dish to make when you are in a hurry.
Make this fruit salad in about 10 minutes. You can add or subtract different fruit according to your taste and what is in season. It can be considered as a healthy sweet dessert to replace the calorie loaded icecreams and sweets.
Ingredients

Strawberries - cleaned and sliced
Fresh mint juice- a little
Seedless grapes, halved
Water melon sliced
Kiwis, peeled and sliced
Siced Bananas
Sliced Cantaloupes
Sliced Pineapple
Sugar as needed
Lemon juice
Directions
In a large bowl, combine the strawberries, grapes, kiwis, Cantaloupe and bananas. Gently mix in Pineapple and water melon. Sprinkle sugar on top. Pour very little lemonjuice and fresh mint juice over the fruits. Chill for 1 hour before serving.
