Potato Croquettes

Though this is the humblest of potato dishes it can still be considered as a regal dish fit for a king only because of its taste. This is a very simple dish in the sense that it can even be made from leftover mashed potatoes. The crispy outer covering plus the tasty mashed potato inside gives our pallette a satisfaction which is no way less than eating a five course meal. Enjoy.
Ingredients
1 large egg yolk
1 cup cold mashed potatoes
1/4 cup grated Cheese
1 tsp garam masala
1/2 tsp chilly powder
1 tablespoon all-purpose flour
2 large eggs
1 cup breadcrumbs
Vegetable oil (for frying; about 1 cup)
Preparation
Mix egg yolks, mashed potatoes, chilly powder and garam masala, cheese, chives, and flour in a medium bowl. Roll into  balls,chill until cold at least 2 hours.
Beat eggs in a bowl, place breadcrumbs in another bowl. Pour vegetable oil into a medium skillet and heat over medium-high until a pinch of breadcrumbs bubbles immediately when added. Dip potato balls in egg, then roll in breadcrumbs. Working in batches, fry, turning often, until golden brown and crisp, 3–4 minutes. Drain on paper towels.
