Egg Sandwich

This is a very easy and truly yummy sandwich recipe. I got the recipe from my mother. She rarely makes sandwiches and I can remember ony two sandwiches that she used to make. One is a mint chutney sandwich and the other one is this. She makes this perfectly well and I only hope that I do justice to her recipe.

Ingredients

8 eggs
1/2 cup mayonnaise
1 teaspoon  yellow mustard
1 Tomato sliced
1/4 cup chopped onion
Salt and pepper to taste
2 Green chilly
Oil as needed
Multigrain bread slices

Directions

Saute Onions and green chilly in Oil and add tomatoes. Stir for 2 minutes. Now break open the eggs and pour it into the onion tomato mixture. On low heat, scramble the eggs. Add Salt.
When it becomes dry, serve it into a bowl.  Stir in the mayonnaise and mustard. Season with salt and pepper. Stir and fill it between sandwiches. I chopped multigrain bread into round circles and made discs with it and filled it with egg filling for a better visual appeal. You can just fill it between bread slices.

Tuna Sandwich

This is the easiest of breakfast or dinner recipes and one of the tastiest among sandwich recipes. A very tasty dish and it saves a lot of time. A tuna filling for sandwich can be made in different ways by adding cucumber, tomato, spices, other boiled veggies etc. But this one is the simplest and easiest of all. Teach your family nembers how to make it and take some time off from your kitchen while your hubby or kids prepare todays dinner for you. Enjoy.
Ingredients
Toasted slices of Multigrain bread-8 slices
2 cans water-packed tuna fish
2 to 4 tablespoons mayonnaise
1/4 red onion, diced small
1 tablespoon lemon juice (from 1/2 lemon)
1tbsp Tomato sauce
Salt and pepper
Method
Use a can opener to cut open the cans of tuna fish, but leave the lid in place. Holding the cans over the sink or a bowl, press the lid into the tuna fish and tilt the can to drain all the liquid. Remove the lids and transfer the tuna fish to a mixing bowl.
Add 2 tablespoons of mayonnaise, onion, lemon juice, tomato sauce, a sprinkle of salt, and a few cracks of fresh black pepper to the tuna fish. Stir with a fork to combine, breaking up any large chunks of tuna fish as you go. Add more mayo if you'd like smoother, creamier tuna salad. Taste and add more of any of the ingredients to taste. Spread a thin layer between toasted slices of Multigrain bread.

Chicken Sandwich

Chicken sandwiches make a perfect lunch or dinner if you have very little time to spare in your hands. I believe that nothing can beat the ease with which we can make this. The happiness with which people grab it from the serving plate is never never directly propotional to the time taken for its preparation. So this is a welcome dish for all busy working moms out there. Enjoy the satisfied smile of your family and have more time for pleasure in your lives. Enjoy.
Ingredients
Slices of bread of your choice(I used multigrain bread)
1 breast of chicken
1 medium sized onion
I salad cucumber
1 capsicum
1/3 rd cup chopped olives
2 tbsp mayonnaise
1 tbsp chicken spread
Butter
salt & pepper to taste
Method
Grab a boneless and skinless chicken breast and boil it on medium heat for 20 minutes or until fully cooked. To test if it is fully cooked, insert a fork into the breast. The fork will pass through easily.
Shred the chicken with your hands in a bowl. It will be very tender and will come off easily.
Add 2 tbsp mayonnaise to the shredded chicken.
Add salt and pepper to taste.
And a heaping tbsp of chicken spread. You can also use mustard sauce if you want.
Grab your favorite sandwich bread.
Brown it with some butter in a pan.
Plop a generous amount of chicken on the bread.(Make sure that the buttered and browned side comes in the inner part of the sandwich) I prefer my sandwich bread to look plain and clean outside.
Add the tomato in big round slices. and olives and sliced cucumber . Add sliced Onions and capsicum.
Sprinkle some more salt and pepper if you like. Cover it with the next slice of bread. The sandwich is ready. You can make layers of bread slices in this way by adding more filling.
